Here is how to get the classic look into your AutoCAD Architectural or AutoCAD MEP software without losing your vertical tools.
Open your software. At the command line type CUI to bring up the customize user interface dialog box.

At the top of the dialog box click on the Transfer tab.
NOTE:
- The left side is your current aca.cuix do not alter or do anything with this side.
- The right side will be any new or added cuix.
From the right side click on the open folder icon. 

Navigate to the C:\Users\your user profile folder\AppData\Roaming\Autodesk\ACA 2016 or MEP 2016\enu\Support folder and find and select on the acad.cuix file. Click the Open button.
You should now see on the left is aca.cuix and on the right is acad.cuix

On the right side expand Toolbars. Select on the first toolbar and scroll down to the last toolbar. Then hold down the shift key select on the last toolbar. This will select all the toolbars.

Letting go of the shift key you can right click your mouse button and select "Copy".

Now over on the left side click on Toolbars and right. Select "Paste". This copies all of the toolbars into your aca.cuix workspace.

You will now do the exact same steps to copy the menus. Click the "apply" button and then click on the customize tab.
If you get a dialog box that pops up called "Duplicate Elements" just click the "Replace All" button.

Back on the customize tab you will now customize the Architecture workspace
Select on the Architecture workspace so its highlighted.
In the right panel click on the "Customize Workspace" button.

You will see that back on the left panel you have check boxes. Expand Toolbars and uncheck/check which toolbars you want. Put a check mark next to menus to show all menus at the top of the interface.
When you are finished selecting on the items click the "Done" button. At the bottom of the dialog box click the "Ok" button.

You should now be back on your software interface. If you turned on any toolbars you will see them scattered. You will have to manually drag them to where you want them to be on the interface.
To show the menus type MENUBAR at the command line.
To close the Ribbon type RIBBONCLOSE at the command line.
